2 cups cantaloupe balls
2 cups honeydew melon balls
1 1/2 cups cherry tomatoes, halved
8 oz fresh mozzarella pearls, drained and patted dry
4 oz thinly sliced prosciutto, torn into ribbons
1/2 cup loosely packed fresh basil leaves, torn

Dressing:
3 tbsp extra-virgin olive oil
1 tbsp white balsamic vinegar
2 tsp fresh lime juice
2 tsp honey
1 tbsp finely minced shallot
1/2 tsp finely grated lime zest
1/2 tsp Dijon mustard
1/8 tsp red pepper flakes
1/8 tsp kosher salt
1/4 tsp black pepper, plus more for serving

INSTRUCTIONS

1. Make the dressing:
Whisk the white balsamic vinegar, lime juice, honey, shallot, lime zest, Dijon, red pepper flakes, salt, and black pepper. Slowly whisk in the olive oil, then let the dressing stand for 5 minutes.

2. Arrange the salad:
Spread the cantaloupe, honeydew, tomatoes, and mozzarella across a large shallow serving platter. Drizzle with two-thirds of the dressing, then gently turn the ingredients once or twice to coat.

3. Add the prosciutto and basil:
Tuck the prosciutto ribbons and torn basil throughout the salad. Drizzle the remaining dressing evenly over the top.
