INGREDIENTS

For the salad:
1½ lb sweet potatoes, peeled and cut into ¾-inch cubes
1½ cups corn kernels, thawed and patted dry if frozen
1 (15 oz) can black beans, rinsed, drained, and patted dry
1 red bell pepper, diced
½ cup finely diced red onion
1 small jalapeño, seeded and finely chopped, optional
½ cup chopped fresh cilantro
⅓ cup roasted pepitas
2 tbsp plus 1 tsp olive oil, divided
1 tsp smoked paprika
½ tsp chili powder
½ tsp ground cumin
½ tsp garlic powder
¾ tsp kosher salt
¼ tsp black pepper

For the smoky maple-lime dressing:
¼ cup extra-virgin olive oil
3 tbsp fresh lime juice
2 tsp apple cider vinegar
1 tbsp pure maple syrup
1 tsp lime zest
1 tsp Dijon mustard
1 small garlic clove, finely grated
¼ tsp smoked paprika
¼ tsp ground cumin
½ tsp kosher salt
⅛ tsp black pepper

INSTRUCTIONS

1. Preheat and prepare:
Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper.

2. Season the sweet potatoes:
Toss the sweet potatoes with 2 tbsp olive oil, smoked paprika, chili powder, cumin, garlic powder, salt, and black pepper. Spread them in one uncrowded layer.

3. Roast until caramelized:
Roast for 15 minutes. Flip, then roast for another 10–15 minutes until tender with browned edges. Cool for 10–15 minutes until warm but no longer steaming.

4. Char the corn:
Heat the remaining 1 tsp olive oil in a large skillet over medium-high heat. Add the corn and cook for 5–7 minutes, stirring occasionally, until lightly charred. Cool briefly.

5. Make the dressing:
Whisk the olive oil, lime juice, vinegar, maple syrup, lime zest, Dijon, garlic, smoked paprika, cumin, salt, and pepper. Stir in the red onion and jalapeño. Let stand for 10 minutes.

6. Assemble the salad:
Combine the warm sweet potatoes, corn, black beans, bell pepper, and cilantro. Pour over the dressing and toss gently until evenly coated.

7. Finish and serve:
Fold in most of the pepitas. Let the salad rest for 10 minutes, then taste and adjust with salt or lime juice. Garnish with the remaining pepitas and serve.
