Recipe Yield: 2 cocktails

INGREDIENTS

1/2 cup fresh blueberries
2 tsp honey or simple syrup
2 Tbsp fresh lime juice
1/2 cup vodka
3/4 cup ginger beer, chilled
3/4 cup champagne or prosecco, chilled
1 cup ice
1/3 cup frozen blueberries
2 maraschino cherries, for garnish
2 lime wedges or thin lime slices, optional garnish

INSTRUCTIONS

1. Muddle the blueberries:
Add fresh blueberries, honey, and lime juice to a cocktail shaker or bowl. Gently muddle until the berries release their juices but still have some texture.

2. Add the vodka:
Pour in the vodka and stir well to combine. Meanwhile, fill two glasses with ice and frozen blueberries.

3. Build the cocktails:
Divide the blueberry mixture evenly between both glasses. Pour in the ginger beer first, then slowly top with champagne or prosecco for the best sparkle.

4. Finish and garnish:
Gently stir once or twice to lightly combine without flattening the bubbles. Garnish each glass with a maraschino cherry and lime wedge if desired. Serve immediately while cold and bubbly.

HELPFUL TIPS TO PERFECT THIS RECIPE

  • Use a bold ginger beer:
A stronger ginger beer gives this cocktail that classic mule flavor and keeps the blueberries from overpowering the drink.
  • Chill everything first:
Very cold champagne, vodka, and ginger beer make a noticeable difference. This keeps the cocktail crisp and prevents watered-down flavor.
  • Taste before topping:
Blueberries naturally vary in sweetness. If yours are tart, add an extra 1 tsp simple syrup before adding the bubbly.
