1 tsp cold water

1/4 tsp kosher salt, divided
1/8 tsp crushed red pepper flakes
1/2 tsp finely grated lemon zest
1 tsp fresh lemon juice

INSTRUCTIONS
1. Preheat the oven:
Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
2. Make the blueberry topping:
Combine 1 cup blueberries, balsamic vinegar, 2 tsp honey, 1/8 tsp salt, and red pepper flakes in a small saucepan. Cook over medium heat for 4–5 minutes, stirring occasionally and gently pressing a few berries as they soften.
3. Thicken the topping:
Stir together the cornstarch and cold water. Add it to the blueberries and simmer for 30–60 seconds, until glossy and lightly thickened. Remove from the heat and cool for 5 minutes.
4. Pre-crisp the flatbreads:
Arrange the flatbreads on the prepared baking sheet and brush with 2 tsp olive oil. Bake for 3 minutes, then remove them from the oven.
