Fiesta Lime Avocado Chicken brings smoky spice, bright citrus, and cool avocado salsa together in one colorful skillet dinner. The chicken cooks until deeply golden, then gets coated in a buttery honey-lime glaze that clings to every bite. A fresh topping of charred corn, juicy tomatoes, jalapeño, cilantro, and creamy avocado adds delicious contrast without making the recipe feel fussy.
This is the kind of meal that looks festive but fits comfortably into a busy weeknight. Everything comes together quickly, and the salsa can be mixed while the chicken cooks. Serve it with cilantro rice, warm tortillas, or crisp greens for an easy dinner that feels a little special. The sweet, tangy, and smoky flavors keep every bite lively, while the creamy avocado gently balances the heat. It is bright, satisfying, and destined to disappear quickly.

Recipe Yield: 4 servings
INGREDIENTS
4 boneless, skinless chicken breast cutlets, 5–6 oz each and about 1/2 inch thick
1 cup corn kernels, fresh or thawed and patted dry
1 cup quartered cherry tomatoes
2 medium ripe avocados, diced
1/4 cup finely diced red onion
1 small jalapeño, seeded and finely chopped
1/4 cup chopped fresh cilantro
4 tbsp fresh lime juice, divided
1 tsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1 1/2 tsp kosher salt, divided
1/2 tsp black pepper
2 tbsp olive oil, divided
1 tsp finely grated lime zest
1 tbsp honey
3 tbsp low-sodium chicken broth
2 garlic cloves, minced
1 tbsp unsalted butter
INSTRUCTIONS
1. Season the chicken:
Pat the chicken dry. If needed, gently pound thicker areas to an even 1/2-inch thickness. Combine the chili powder, smoked paprika, cumin, garlic powder, oregano, 1 tsp salt, and black pepper. Rub evenly over both sides.
2. Char the corn:
Heat a large skillet over medium-high heat. Add 1 tbsp olive oil and the corn. Cook for 4–5 minutes, stirring occasionally, until lightly charred. Transfer to a bowl and cool for 5 minutes.
3. Make the avocado salsa:
Add the tomatoes, red onion, jalapeño, cilantro, 2 tbsp lime juice, and remaining 1/2 tsp salt to the corn. Toss gently, then fold in the avocado without mashing it.
4. Sear the chicken:
Add the remaining 1 tbsp olive oil to the skillet. Cook the chicken for 3–4 minutes on the first side. Flip and cook for 2–3 minutes, until deeply golden and 160–162°F inside. Transfer to a clean plate.
5. Make the lime glaze:
Reduce the heat to medium-low. Add the garlic and cook for 20 seconds. Stir in the chicken broth, remaining 2 tbsp lime juice, lime zest, and honey. Simmer for 1–2 minutes, scraping up the browned bits. Reduce the heat to low, then whisk in the butter until glossy.
6. Finish and serve:
Return the chicken and any accumulated juices to the skillet. Turn the chicken in the glaze for 30–60 seconds, until it reaches 165°F. Spoon the glaze over the chicken, then generously top with the avocado salsa. Serve immediately.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Keep the chicken evenly thick: Chicken cutlets between 1/2 and 3/4 inch thick cook quickly and brown evenly. Pound thicker sections gently before seasoning.
- Let the charred corn cool briefly: Warm corn can soften the avocado too quickly. A five-minute cooling period keeps the salsa fresh, chunky, and colorful.
- Add the butter after reducing the glaze: Simmer the lime mixture first, then whisk in the butter. This creates a smooth, glossy finish instead of a thin pan sauce.
