INGREDIENTS

Meatballs:
1 lb 85% lean ground beef
1/2 lb ground pork
1/2 cup panko breadcrumbs
1/4 cup whole milk
1 large egg
1/3 cup finely grated Parmesan cheese
2 tbsp finely chopped fresh parsley
2 garlic cloves, finely minced
1 tsp onion powder
1 1/4 tsp kosher salt
1/2 tsp black pepper

Stew:
1 1/4 lb Yukon Gold potatoes, cut into 1-inch pieces
1 medium yellow onion, diced
3 medium carrots, cut into 1/2-inch pieces
4 cups low-sodium beef broth
2 garlic cloves, finely minced
2 tbsp tomato paste
3 tbsp all-purpose flour
1 tsp dried thyme
1/2 tsp dried rosemary
1 tbsp Worcestershire sauce
2 tsp Dijon mustard
1 bay leaf
3/4 tsp kosher salt
1/2 tsp black pepper
2 tbsp olive oil
1 tsp balsamic vinegar
1 tbsp unsalted butter
1 tbsp finely chopped fresh parsley

INSTRUCTIONS

1. Heat the oven:
Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper.

2. Soften the breadcrumbs:
Combine the panko and milk in a large bowl. Let stand for 5 minutes.

3. Shape the meatballs:
Add the beef, pork, egg, Parmesan, 2 tbsp parsley, half the garlic, onion powder, 1 1/4 tsp salt, and 1/2 tsp pepper. Mix gently just until combined, then shape into 24 meatballs.

4. Bake the meatballs:
Arrange the meatballs on the prepared baking sheet. Bake for 10–12 minutes, until lightly browned and set around the edges but not fully cooked through.

5. Cook the vegetables:
Meanwhile, heat the olive oil in a Dutch oven over medium heat. Add the onion and carrots, then cook for 5–6 minutes until the onion softens.

6. Build the flavor:
Add the remaining garlic and tomato paste. Cook for 1 minute. Sprinkle in the flour, thyme, and rosemary, then cook for 1 minute more.

7. Simmer the potatoes:
Gradually stir in the beef broth until smooth. Add the Worcestershire, Dijon, potatoes, bay leaf, remaining salt, and remaining pepper. Bring to a gentle boil, then reduce the heat, cover, and simmer for 12 minutes.

8. Finish the stew:
Add the baked meatballs and stir gently. Simmer uncovered for 8–12 minutes, until the potatoes are fork-tender and the meatballs reach 160°F.

9. Add the final touches:
Remove the bay leaf. Stir in the balsamic vinegar and butter, then rest the stew for 5 minutes. Finish with the remaining parsley and serve warm.
