INGREDIENTS

Strawberry filling:
3 cups diced fresh strawberries (about 1 lb)
2 tbsp pure maple syrup
1 tbsp fresh lemon juice
1 tsp finely grated lemon zest
1 tbsp cornstarch
1 tbsp chia seeds
1/2 tsp pure vanilla extract
1/8 tsp fine sea salt

Oatmeal crust and crumble:
1 1/2 cups old-fashioned rolled oats
1 cup oat flour
1/2 cup fine almond flour
1/4 cup coconut sugar
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp fine sea salt
7 tbsp unsalted butter, melted and slightly cooled
2 tbsp pure maple syrup
1 large egg
1 tsp pure vanilla extract

INSTRUCTIONS

1. Prepare the pan:
Preheat the oven to 350°F. Lightly coat an 8-inch square metal pan with nonstick spray, then line it with parchment paper, leaving overhang on two sides.

2. Cook the strawberry filling:
Whisk the maple syrup, lemon juice, and cornstarch in a saucepan until smooth. Add the strawberries, lemon zest, and salt. Cook over medium heat for 7–9 minutes, stirring frequently and lightly crushing some berries.

3. Finish the filling:
Once thick and bubbling, drag a spatula across the pan; the trail should remain visible briefly. Remove from the heat, stir in the chia seeds and vanilla, then rest for 10 minutes.

4. Make the oatmeal crumble:
Combine the rolled oats, oat flour, almond flour, coconut sugar, baking powder, cinnamon, and salt. Add the melted butter, maple syrup, egg, and vanilla. Stir until evenly moistened with small and large crumbs.

5. Form the crust:
Reserve 1 1/4 cups of the oatmeal mixture for the topping. Press the remaining mixture firmly and evenly into the prepared pan. Bake for 10 minutes.

6. Assemble the bars:
Spread the strawberry filling evenly over the warm crust. Crumble the reserved oatmeal mixture over the filling, leaving a few small openings for the strawberries to show.

7. Bake the bars:
Bake for 32–38 minutes, until the topping is golden and the strawberry filling bubbles around the edges. Transfer the pan to a wire rack.

8. Cool and slice:
Cool in the pan for 1 hour, then refrigerate for at least 1 hour. Lift out using the parchment paper and cut into 9 bars.
