INGREDIENTS

2 large orange-fleshed sweet potatoes, about 12 oz each
1 small crisp red apple, about 5 oz, unpeeled, cored, and cut into 1/2-inch cubes
1 cup fresh or frozen cranberries, not thawed
2 oz cream cheese, softened
4 tbsp unsalted butter
1/2 tsp finely chopped fresh rosemary, plus more for serving
1/3 cup apple cider
1/4 cup pure maple syrup, divided
1 tbsp light brown sugar
1 tsp olive oil
1 tsp kosher salt, divided
1 tsp finely grated orange zest
1 tbsp fresh orange juice
1/2 tsp ground cinnamon, divided
1 tsp apple cider vinegar
1/8 tsp ground nutmeg
1/8 tsp black pepper

INSTRUCTIONS

1. Bake the sweet potatoes:
Preheat the oven to 400°F and line a baking sheet with parchment paper. Scrub and dry the sweet potatoes, then pierce them several times. Rub with olive oil and 1/4 tsp salt. Bake for 55 to 70 minutes, until a thin knife slides through the centers without resistance.

2. Brown the butter:
Meanwhile, melt the butter in a medium skillet over medium heat. Cook for 3 to 5 minutes, swirling often, until the milk solids turn amber and smell nutty. Remove from the heat, swirl once more, and immediately pour half into a large bowl.

3. Make the cranberry apple topping:
Return the skillet to medium heat. Add the apple and cook for 2 to 3 minutes. Stir in the cranberries, cider, 3 tbsp maple syrup, brown sugar, orange zest, 1/4 tsp cinnamon, rosemary, and 1/4 tsp salt. Simmer for 7 to 9 minutes, until the sauce coats the fruit and most cranberries have burst. Remove from the heat, then stir in the vinegar.

4. Prepare the filling:
Let the sweet potatoes cool for 10 minutes, then halve them lengthwise. Carefully scoop the flesh into the bowl with the browned butter, leaving a 1/4-inch border inside each skin. Add the cream cheese, remaining 1 tbsp maple syrup, orange juice, remaining 1/4 tsp cinnamon, nutmeg, black pepper, and remaining 1/2 tsp salt. Mash just until creamy and evenly combined.

5. Fill and bake again:
Divide the filling among the sweet potato skins and gently mound the tops. Return them to the baking sheet and bake for 12 to 15 minutes, until hot with lightly browned ridges.

6. Finish and serve:
Warm the cranberry apple topping briefly if needed. Spoon it generously over the sweet potatoes, finish with a little fresh rosemary, and serve warm.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Bake until completely tender: A knife should slide through each potato without resistance. Even a slightly undercooked center can leave the filling firm or stringy.
  • Protect the delicate skins: Leave about 1/4 inch of sweet potato around the edges while scooping. This gives each shell enough structure to hold the filling.
