INSTRUCTIONS
1. Heat the oven:

Pat the potatoes very dry. Toss with the remaining 2 tbsp olive oil, garlic powder, oregano, paprika, salt, and black pepper.
3. Roast cut-side down:
Arrange the potatoes cut-side down in one layer. Roast without moving for 25–30 minutes, until deeply golden and easily released from the pan.
4. Add the feta:
Turn the potatoes cut-side up. Scatter the feta cubes between them, then roast for 6 minutes.
5. Add the fresh garlic:
Combine the melted butter, garlic, lemon zest, and red pepper flakes. Spoon over the potatoes and feta, keeping the garlic mostly on the food. Roast for 3–4 minutes, until fragrant and tender.
6. Finish and serve:
