INSTRUCTIONS
1. Plump the cranberries:
Place the cranberries in a small heatproof bowl and cover them with boiling water. Let stand for 5 minutes, then drain thoroughly.
2. Cook the green beans:
Bring a large pot of water and 1 tbsp salt to a boil. Add the green beans and cook for 5–6 minutes, until tender with just a slight bite. Drain well and let them steam-dry for a few minutes.
3. Toast the almonds:
Meanwhile, toast the almonds in a large skillet over medium heat for 3–4 minutes, stirring often, until lightly golden and fragrant. Transfer them to a plate.
4. Sauté the aromatics:
Add the olive oil and 1 tbsp butter to the skillet. Cook the shallot over medium heat for 2–3 minutes, until softened. Add the garlic and cook for 30 seconds.
5. Glaze the green beans:
Stir in the water, Dijon mustard, and honey. Add the green beans and toss for about 2 minutes, until heated through. Remove the skillet from the heat. Add the remaining 2 tbsp butter, lemon juice, 1 tsp lemon zest, ¼ tsp salt, and black pepper. Toss until the butter melts and creates a glossy coating.
6. Finish and serve:
