INGREDIENTS

1 lb sugar snap peas, strings removed and thoroughly dried
1/2 small red onion, cut into 1/4-inch wedges and separated
1 tbsp unsalted butter, melted
1 tsp finely grated lemon zest
2 tsp fresh lemon juice
1/2 tsp Dijon mustard
1/3 cup finely grated Parmesan cheese, divided
1 tbsp olive oil
1/2 tsp kosher salt
1/2 tsp garlic powder
1/4 tsp black pepper
1/8 tsp crushed red pepper flakes
2 tbsp chopped fresh parsley

INSTRUCTIONS

1. Preheat the pan:
Place a large rimmed sheet pan in the oven. Then, preheat the oven to 450°F.

2. Season the vegetables:
Toss the sugar snap peas and red onion with olive oil, salt, garlic powder, black pepper, and red pepper flakes.

3. Roast until blistered:
Carefully spread the vegetables across the hot pan in one layer. Roast for 6 minutes, toss, and continue roasting for 4 to 6 minutes until browned in spots but still crisp-tender.

4. Prepare the lemon butter:
Meanwhile, whisk the melted butter, lemon zest, lemon juice, and Dijon until smooth.

5. Finish and serve:
