Recipe Yield: 4–6 servings (12 pieces)

INGREDIENTS

12 mini fresh mozzarella balls (ciliegine or small bocconcini)
6 large thin slices prosciutto (halved lengthwise)
6 pimento-stuffed green olives (thinly sliced crosswise)
2 tbsp balsamic glaze, for drizzling
1 tsp extra virgin olive oil
Fresh basil leaves, optional, for garnish

INSTRUCTIONS

1. Prepare the ingredients:
Drain the mozzarella balls and pat very dry with paper towels. Halve the prosciutto lengthwise into 12 strips. Thinly slice the olives crosswise and choose the 12 best center rounds for the pupils.

2. Wrap the eyeballs:
Wrap each mozzarella ball with one strip of prosciutto, leaving a small area of cheese uncovered on top. Tuck the prosciutto seam underneath to help it stay in place.

3. Add the pupils:
Make a tiny, shallow indentation in the exposed mozzarella with the tip of a small paring knife. Press one olive round gently into each indentation so it sits flat and secure.

4. Chill the eyeballs:
Arrange the eyeballs on a white platter or marble board. Cover loosely and refrigerate for 15–20 minutes to help the prosciutto hold its shape.

5. Finish the platter:
Just before serving, lightly drizzle the eyeballs with olive oil. Drizzle balsamic glaze around and across the platter to create eerie “blood streaks,” using only as much as needed. Garnish with fresh basil leaves, if desired.

6. Serve:
Serve slightly chilled or let stand for about 10 minutes at room temperature for a softer mozzarella texture.
