Peach Jalapeño Jam brings ripe summer peaches and a gentle peppery kick together in one glossy homemade spread. It tastes bright and peach-forward, with enough sweetness to feel like jam without covering the fruit’s natural flavor.

Low- or no-sugar-needed pectin creates a dependable texture using only one cup of sugar. That means less cooking, fresher peach flavor, and a beautiful golden-orange color. Finely chopped jalapeños add warmth throughout each jar, while bottled lemon juice keeps the finish fresh and balanced.

Spread it over warm toast, biscuits, or cornbread. It is also wonderful with cream cheese, goat cheese, or sharp cheddar. A spoonful can brighten grilled chicken, pork, or a summer cheese board. Sweet, savory, and gently spicy, this refrigerator jam earns its place beside almost anything.

Recipe Yield: About 4 cups (32 servings)

INGREDIENTS

3 3/4 cups peeled, finely chopped, lightly crushed ripe yellow peaches, about 2 to 2 1/4 lb whole peaches
1/4 cup very finely chopped jalapeños, about 2 medium peppers
1/3 cup water
2 tbsp bottled lemon juice
3 tbsp low- or no-sugar-needed flex-batch powdered fruit pectin, measured from a multi-use container
1 cup granulated sugar
1/4 tsp fine sea salt

INSTRUCTIONS

1. Prepare the container:
Wash one heat-safe glass storage container with at least a 5-cup capacity and its lid in hot, soapy water. Sanitize according to the manufacturer’s directions, then keep the container warm until ready to fill.

2. Prepare the peaches:
Peel, pit, and finely chop the peaches. Lightly crush them until juicy with small pieces remaining, then measure exactly 3 3/4 cups.

3. Prepare the jalapeños:
Wearing gloves, stem and finely chop the jalapeños. Remove all seeds and pale membranes for mild heat, or leave a small amount for a warmer finish.

4. Combine the jam mixture:
Add the peaches, jalapeños, water, lemon juice, and salt to a 5- to 6-qt heavy-bottomed pot. Gradually stir in the pectin until no dry pockets remain.

5. Boil the fruit:
Bring the mixture to a full rolling boil over high heat, stirring constantly. Once the boil cannot be stirred down, boil hard for exactly 1 minute.

6. Add the sugar:
Add the sugar all at once and stir until incorporated. Return the jam to a full rolling boil, then boil hard for exactly 1 minute while stirring constantly.

7. Finish the jam:
Immediately remove the pot from the heat and skim away any foam. Let the jam stand for 3 minutes, stirring gently once or twice to distribute the fruit and jalapeños.

8. Transfer the jam:
Carefully spoon or ladle the hot jam into the prepared container, leaving at least 1/2-inch space at the top. Let it cool at room temperature for about 1 hour.

9. Chill the jam:
Cover and refrigerate for 24 hours so the jam can finish setting. Keep refrigerated and use within 3 weeks.

10. Freeze for longer storage:
After the 1-hour cooling period, portion any jam intended for freezing into straight-sided freezer-safe containers. Leave 1/2-inch space at the top, cover, and freeze for up to 6 months.


Helpful Tips to Perfect This Recipe

  • Use the exact pectin type: Choose flex-batch powdered pectin labeled low- or no-sugar-needed and intended for cooked jam. Regular, liquid, instant freezer-jam, and calcium-activated pectins are not direct substitutes.
  • Measure the prepared fruit carefully: Peel, chop, lightly crush, and then measure the peaches. Together, the peaches and jalapeños should equal exactly 4 cups.
  • Control the heat through the membranes: Jalapeños vary naturally. Removing the pale inner membranes gives the jam gentle warmth without hiding the peach flavor.
  • Wait before judging the texture: Reduced-sugar jam looks softer while warm. Give it a full 24 hours under refrigeration before evaluating the final set.
  • Keep the jam cold: This unique jalapeño variation is intended only for refrigeration or freezing. Do not store it unopened at room temperature or use these directions for water-bath canning.
