Fresh Greek Cucumber Feta Salad made with crisp cucumbers, crumbled feta, herbs, red onion, and a light lemon vinaigrette.

Greek Cucumber Feta Salad brings crisp cucumbers, creamy feta, red onion, and fresh herbs together in one bright, refreshing bowl. A simple lemon-oregano vinaigrette adds just enough tang and richness without covering up the fresh ingredients. Every bite feels cool, crunchy, salty, and fresh.

This easy cucumber salad comes together quickly and needs no cooking, making it a natural choice for warm days or busy dinners. Serve it beside grilled chicken, salmon, shrimp, lamb, or warm flatbread. It also looks beautiful on a lunch table or summer spread. For the best texture, assemble it shortly before serving so the cucumbers stay crisp and the feta keeps its rustic pieces. Simple ingredients, clean Mediterranean flavor, and very little prep—that combination is hard to beat.

Recipe Yield: 4 servings

INGREDIENTS

2 large English cucumbers, sliced into ¼-inch rounds
¾ cup feta cheese, crumbled into varied-size pieces
¼ cup thinly sliced red onion
2 Tbsp fresh dill, finely chopped
1 Tbsp fresh parsley, finely chopped

Greek Lemon Vinaigrette:
3 Tbsp extra-virgin olive oil
1½ Tbsp fresh lemon juice
1 tsp lemon zest
½ tsp dried oregano
¼ tsp salt
¼ tsp freshly ground black pepper

INSTRUCTIONS

1. Prepare the vegetables:
Pat the cucumbers dry, then add them to a large serving bowl with the red onion, dill, and parsley. Toss gently to distribute the herbs.

2. Make the vinaigrette:
Meanwhile, whisk the olive oil, lemon juice, lemon zest, oregano, salt, and black pepper until well combined.

3. Dress the salad:
Drizzle the vinaigrette over the cucumber mixture. Toss gently just until evenly coated.

4. Add feta and finish:
Finally, add the feta and fold gently, keeping some larger pieces intact. Taste and adjust the salt, pepper, or lemon juice as needed. Serve immediately, or chill for up to 15 minutes.

Helpful Tips to Perfect This Recipe

  • Keep the cucumbers crisp: English or Persian cucumbers work best because they have thin skins and fewer seeds. Pat them completely dry and avoid slicing them paper-thin.
  • Mellow the red onion if needed: For a softer onion flavor, soak the slices in cold water for 5–10 minutes. Drain and pat them dry before adding them to the salad.
  • Dress shortly before serving: The vegetables, herbs, feta, and vinaigrette can be prepared separately. Combine everything just before serving so the cucumber rounds stay crisp and fresh.
