INGREDIENTS

½ cup full-fat cottage cheese, drained if visibly watery
¾ cup fine blanched almond flour, plus 1–2 tbsp if needed
⅓ cup small fresh blueberries, rinsed and thoroughly dried
¼ cup vanilla protein powder
1½ tbsp honey or maple syrup
1 tbsp fresh lemon juice
1 tsp finely grated lemon zest
½ tsp vanilla extract
⅛ tsp fine sea salt

INSTRUCTIONS

1. Blend the base:
Add cottage cheese, honey, lemon juice, lemon zest, vanilla, and salt to a food processor. Blend until completely smooth, scraping down the sides as needed.

2. Make the dough:
Next, add ¾ cup almond flour and the protein powder. Pulse just until evenly combined and a thick, soft dough forms. Let it stand for 5 minutes so the dry ingredients can absorb the moisture.

3. Check the consistency:
The dough should hold a soft mound on a spoon. If it still looks loose, pulse in additional almond flour 1 tbsp at a time.

4. Add the blueberries:
Transfer the dough to a bowl. Gently fold in the blueberries, keeping them whole whenever possible.

5. Chill the mixture:
Cover and refrigerate for 30 minutes, or until the dough is cold and easy to scoop.

6. Shape and set:
Use a 2-tbsp cookie scoop to portion the mixture into 10 bites. With lightly dampened hands, gently shape each portion into a ball without squeezing the berries. Place on a parchment-lined tray and refrigerate for at least 1 hour, or until firm and cold.
