Hot Honey Hummus takes everything comforting about classic hummus and gives it a glossy sweet-heat finish. The base is silky, lemony, and deeply savory, with tahini, cumin, and just enough garlic. Warm hot honey chickpeas settle into the swoops on top. Every scoop brings a different balance of creamy, spicy, and sweet.

The extra-smooth texture comes from briefly simmering canned chickpeas until they are exceptionally tender. A quick lemon rest softens the garlic’s sharper edge. Meanwhile, ice water lightens the tahini as it blends. The method feels restaurant-worthy but stays easy enough for a relaxed afternoon snack.

Serve this hummus with warm pita, crisp vegetables, crackers, or toasted flatbread. It also makes a flavorful spread for wraps and sandwiches. The colorful topping turns a familiar dip into something special without making the recipe complicated.

Recipe Yield: 8 servings, about 3 cups

INGREDIENTS

Hummus:
2 cans (15 oz each) chickpeas, drained and rinsed
1 tsp baking soda
1/2 cup tahini, well stirred
1/3 cup fresh lemon juice
1 large garlic clove, roughly chopped
1 tsp fine sea salt, plus more to taste
1/2 tsp ground cumin
1/3 cup ice water, divided, plus more as needed
2 tbsp extra-virgin olive oil, divided

Hot Honey Topping:
1/4 cup honey
3/4 tsp crushed red pepper flakes
1/4 tsp smoked paprika
1 tsp fresh lemon juice

INSTRUCTIONS

1. Mellow the garlic:
Add 1/3 cup lemon juice, garlic, and salt to a food processor. Process for 30 seconds, then let the mixture rest while the chickpeas cook.

2. Soften the chickpeas:
Place the chickpeas and baking soda in a medium saucepan. Cover with water by at least 2 inches. Bring to a boil, then reduce to a lively simmer and cook for 18–20 minutes, until the chickpeas are very soft and crush easily. Drain and rinse thoroughly with warm water. Reserve 1/2 cup chickpeas for the topping.

3. Whip the tahini base:
Add the tahini, cumin, and 1/4 cup ice water to the lemon mixture. Blend for 1 minute. Scrape down the bowl, then blend for 30 seconds more, until pale and creamy.

4. Blend the hummus:
Add the warm chickpeas and 1 tbsp olive oil. Blend for 2–3 minutes, slowly adding the remaining ice water. Add more water, 1 tbsp at a time, if needed. Taste and adjust the salt or lemon juice.

5. Make the hot honey topping:
Combine the honey and crushed red pepper flakes in a small saucepan. Warm over low heat for 2 minutes without boiling. Remove from the heat, then stir in the smoked paprika and 1 tsp lemon juice. Fold in the reserved chickpeas and let them stand for 3 minutes.

6. Finish and serve:
Spread the hummus in a shallow serving bowl and create a few natural swoops. Spoon the hot honey chickpeas over the top. Drizzle with the remaining 1 tbsp olive oil and serve with warm pita, crackers, or fresh vegetables.


Helpful Tips to Perfect This Recipe

  • Use smooth, pourable tahini: Stir the tahini thoroughly before measuring. Very thick or dry tahini may require a little additional ice water.
  • Cook the chickpeas until exceptionally tender: They should crush easily between two fingers. There is no need to remove every loosened skin.
  • Adjust the heat before serving: Use 1/2 tsp red pepper flakes for gentle warmth. Increase to 1 tsp for a more pronounced hot honey finish.
  • Serve closer to room temperature: Hummus tastes creamier and more flavorful after sitting outside the refrigerator for about 20 minutes.
  • Store the topping separately: Refrigerate the hummus and hot honey chickpeas in separate airtight containers for up to four days. Gently warm the topping before serving.
