Recipe Yield: 18 cookies

INGREDIENTS

2 1/4 cups all-purpose flour
1 cup unsalted butter, softened
1 cup granulated sugar
2 Tbsp freeze-dried strawberry powder
8 oz dark chocolate, chopped
1 large egg, room temp
1 tsp vanilla extract
1/4 tsp strawberry extract
1/2 tsp baking powder
1/4 tsp salt
1 tsp coconut oil
2 Tbsp white pearl or heart sprinkles

INSTRUCTIONS

1. Cream the base:
First, beat butter and sugar together until light and fluffy, about 2 minutes. Then, add egg, vanilla, and strawberry extract, mixing until smooth.

2. Combine dry ingredients:
Meanwhile, whisk flour, baking powder, salt, and strawberry powder in a separate bowl. Gradually add to the wet mixture, mixing just until combined.

3. Chill the dough:
Next, cover dough and refrigerate for 30 minutes to prevent spreading and improve texture.

4. Shape and bake:
Preheat oven to 350°F. Scoop 1 1/2 Tbsp dough balls and place 2 inches apart on parchment-lined baking sheets. Bake 11–13 minutes, until edges are set but centers remain soft. Cool completely.

5. Melt chocolate:
Meanwhile, melt dark chocolate with coconut oil until smooth and glossy.

6. Dip and decorate:
Once cooled, dip half of each cookie into chocolate. Immediately sprinkle with hearts. Let set at room temp or chill briefly.

Helpful Tips to Perfect This Recipe

  • Chill for control: Chilling the dough firms the butter, which helps the cookies bake thicker and softer instead of spreading too much.
  • Use freeze-dried strawberries: They deliver real strawberry flavor without extra moisture, keeping the cookie tender yet structured.
  • Dip after cooling fully: Warm cookies will cause chocolate to slide off, so always dip once cookies are completely cool.
