Recipe Yield: 9 servings

INGREDIENTS

2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs, room temperature
1 tsp vanilla extract
1/2 cup sour cream, room temperature
1/4 cup milk

Apple Layer
2 medium apples, peeled and diced small (about 2 cups)
2 tbsp brown sugar
1 tsp cinnamon
1 tsp lemon juice
1 tsp cornstarch
1/4 tsp ground nutmeg

Cinnamon Swirl
1/3 cup brown sugar
1 1/2 tsp cinnamon

Crumb Topping
1/2 cup all-purpose flour
1/3 cup brown sugar
1/4 cup unsalted butter, melted and slightly cooled
1/2 tsp cinnamon
2 tbsp rolled oats
Pinch of salt

Glaze
1/2 cup powdered sugar
1–2 tbsp water
1/4 tsp vanilla extract
How to use: Whisk until smooth and pourable. Start with 1 tbsp water, then add more gradually until you reach a soft drizzle consistency.

INSTRUCTIONS

1. Preheat and prepare:
Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.

2. Prepare the apples:
In a bowl, combine apples, brown sugar, cinnamon, lemon juice, cornstarch, and nutmeg. Toss well, then let sit 5–10 minutes so juices slightly thicken.

3. Mix dry ingredients:
In a separate bowl, whisk flour, baking powder, baking soda, and salt until evenly combined.

4. Cream butter and sugar:
Beat butter and sugar for 2–3 minutes until light and fluffy.

5. Build the batter:
Add eggs one at a time, mixing well after each. Then add vanilla. Next, alternate dry ingredients with sour cream and milk, mixing gently just until combined. Do not overmix.

6. Layer the cake:
Spread half the batter evenly into the pan. Sprinkle cinnamon swirl mixture. Add apples evenly, leaving excess liquid behind. Then carefully spread remaining batter over top.

7. Make crumb topping:
Combine flour, brown sugar, cinnamon, oats, salt, and melted butter. Use fingers to form bakery-style crumble.

8. Bake to perfection:
Bake 42–50 minutes, until a toothpick inserted in the center comes out clean or internal temperature reaches 195–200°F. If browning too quickly, loosely tent with foil during the last 10 minutes.

9. Cool and glaze:
Cool for 20–30 minutes, then drizzle glaze over slightly warm cake for the best finish.

Helpful Tips to Perfect This Recipe

  • Use the Right Apples: Choose firm apples like Honeycrisp or Granny Smith. They hold their shape better, so the cake stays structured and not mushy.
  • Don’t Overmix the Batter: Once you combine wet and dry ingredients, mix gently. Otherwise, the cake can turn dense instead of light and fluffy.
  • Let It Cool Slightly Before Cutting: Although it’s tempting, letting the cake rest helps the layers set properly. As a result, you’ll get clean slices and better texture.
