1 cup cucumber, sliced

1 cup cooked chickpeas (drained and very well dried)
1 tbsp olive oil
1/2 tsp cumin
1/4 tsp paprika
1/4 tsp salt
Herbed Yogurt Sauce:
1 cup Greek yogurt
1 tbsp lemon juice
1 tbsp olive oil
1 clove garlic, finely grated
1 tbsp fresh parsley, finely chopped
1 tbsp fresh dill, finely chopped
1/4 tsp salt
2–3 tbsp water (to thin)
INSTRUCTIONS
1. Season the steak:
Pat steak very dry (this ensures a proper sear), then rub with 1 tbsp olive oil, 3/4 tsp salt, black pepper, paprika, garlic powder, and oregano. Let it rest at room temperature for 15–20 minutes.
2. Cook the steak:
Heat a heavy skillet over medium-high heat until very hot. Add the steak and sear undisturbed for 4–5 minutes per side until a deep golden crust forms. Cook to 135°F (medium-rare), 140–145°F (medium), or 155–160°F (well done). Then remove from heat and let it rest for 8–10 minutes before slicing thinly against the grain.
3. Prepare the chickpeas:
Meanwhile, heat 1 tbsp olive oil in a pan over medium heat. Add thoroughly dried chickpeas, cumin, paprika, and 1/4 tsp salt. Cook 6–8 minutes, stirring occasionally, until lightly crisp and golden.
4. Make the sauce:
In a bowl, combine Greek yogurt, lemon juice, olive oil, garlic, parsley, dill, and 1/4 tsp salt. Then gradually whisk in 2–3 tbsp water until smooth and pourable.
5. Build the bowls:
Divide tomatoes, cucumber, red onion, and olives evenly into bowls. Add warm sliced steak and crispy chickpeas.
6. Finish and serve:
Drizzle generously with herbed yogurt sauce. Optionally finish with a light drizzle of olive oil and extra herbs for a polished, restaurant-style look.
