Gingerbread Truffles are the kind of holiday treat that feels nostalgic, cozy, and a little luxurious all at once. From the very first bite, warm spices, creamy sweetness, and soft cookie texture come together beautifully. While gingerbread is often baked into cookies or loaves, turning it into truffles creates something more indulgent and gift-worthy.

Historically, gingerbread dates back to medieval Europe, where ginger and spices were prized ingredients. Over time, it became a beloved winter tradition, especially during festive seasons. Today, these truffles offer a modern twist on that classic flavor.

Because they require no baking, they’re surprisingly easy to prepare. Meanwhile, the balance of spice and sweetness keeps them from feeling overly rich. Whether you roll them in powdered sugar or dip them in white chocolate, they look elegant on a dessert tray. As a result, Gingerbread Truffles are perfect for holiday parties, homemade gifts, or cozy nights when you want something special without much effort.

Recipe Yield: 20 truffles

INGREDIENTS

2 cup gingerbread cookies, finely crushed
4 oz cream cheese, softened
2 Tbsp molasses
1 tsp ground ginger
1 tsp ground cinnamon
¼ tsp ground cloves
¼ tsp ground nutmeg
½ tsp vanilla extract
1 cup white chocolate, melted (optional for coating)
¼ cup powdered sugar (optional for rolling)

INSTRUCTIONS

1. Prepare the cookie base:
First, add the crushed gingerbread cookies to a medium bowl. Then, stir in the ginger, cinnamon, cloves, and nutmeg until evenly combined.

2. Mix the filling:
Next, add the softened cream cheese, molasses, and vanilla. Using a spatula, mix until a thick, smooth dough forms.

3. Chill the mixture:
Afterward, cover the bowl and refrigerate for 30 minutes. This helps the mixture firm up and makes rolling easier.

4. Shape the truffles:
Once chilled, scoop about 1 Tbsp of the mixture and roll into smooth balls. Place them on a parchment-lined tray.

5. Coat and finish:
Finally, either roll the truffles in powdered sugar or dip them into melted white chocolate. Let them set until firm before serving.

Helpful Tips to Perfect This Recipe

  • Balance the spice carefully: Gingerbread flavors should feel warm, not overpowering. Therefore, taste the mixture before chilling and adjust spices gently if needed.
  • Chill for cleaner shaping: Because the dough softens quickly, chilling ensures round, smooth truffles that look bakery-quality.
  • Elevate the finish: While powdered sugar feels classic, white chocolate adds a richer, gift-ready look and seals in moisture longer.
