Recipe Yield: 6 servings

INGREDIENTS

12 oz elbow macaroni
8 oz lump crab meat, picked over
1 ½ cups shredded sharp white cheddar
1 cup shredded Gruyère
½ cup shredded mozzarella
3 tbsp unsalted butter
3 tbsp all-purpose flour
2 cups whole milk
1 cup heavy cream
1 tsp Dijon mustard
1 tsp Old Bay seasoning
½ tsp garlic powder
½ tsp smoked paprika
1 tsp sea salt
½ tsp black pepper
2 tbsp chopped fresh chives
1 cup panko breadcrumbs
2 tbsp melted butter
2 tbsp grated Parmesan cheese

INSTRUCTIONS

1. Cook the pasta:
Bring a large pot of salted water to a boil. Add macaroni and cook until al dente. Drain well and set aside.

2. Make the roux:
In a large saucepan or Dutch oven, melt butter over medium heat. Whisk in flour and cook for about 1 minute until smooth and lightly golden.

3. Build the creamy base:
Gradually whisk in milk and heavy cream. Cook, whisking often, until the sauce thickens and becomes silky, about 3–4 minutes.

4. Season the sauce:
Stir in Dijon mustard, Old Bay seasoning, garlic powder, smoked paprika, salt, and black pepper until evenly combined.

5. Melt the cheeses:
Reduce heat to low. Add cheddar, Gruyère, and mozzarella. Stir gently until fully melted and smooth.

6. Fold in pasta and crab:
Add cooked macaroni and gently stir to coat. Carefully fold in the crab meat, keeping the pieces intact. Stir in chopped chives.

7. Prepare the topping:
In a small bowl, mix panko breadcrumbs with melted butter and Parmesan until evenly coated.

8. Bake until golden:
Transfer the mac and cheese to a buttered white baking dish. Sprinkle the breadcrumb topping evenly over the surface. Bake at 375°F for 18–20 minutes, until bubbly and lightly golden.

9. Rest and serve:
Let the Creamy Crab Mac and Cheese rest for 5 minutes before serving. Garnish with additional chives if desired.
