Recipe Yield: 4 servings
INGREDIENTS
12 oz pasta shells or elbow macaroni
6 slices bacon, chopped
2 cups sharp cheddar cheese, freshly shredded
1/2 cup mozzarella cheese, shredded
2 tbsp butter
2 tbsp all-purpose flour
2 cups whole milk
1 cup heavy cream
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, finely chopped
INSTRUCTIONS
1. Cook the pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until tender. Then drain well and set aside.
2. Cook the bacon:
Meanwhile heat a large skillet over medium heat. Add chopped bacon and cook for 6–8 minutes until crispy and browned. Transfer the bacon to a paper towel lined plate. Reserve about 1 tbsp bacon fat in the skillet.
3. Build the roux:
Next add butter to the skillet with the bacon fat. Once melted, whisk in the flour and cook for about 1 minute until lightly golden and smooth.
4. Create the cream sauce:
Slowly pour in the milk and heavy cream while whisking constantly. Continue cooking for 3–4 minutes until the sauce begins to thicken.
5. Add the cheeses:
Reduce heat to low. Stir in the cheddar and mozzarella cheese. Then add garlic powder, onion powder, paprika, salt, and black pepper. Stir until the cheese melts and the sauce becomes smooth and creamy.
6. Combine pasta and bacon:
Add the cooked pasta and most of the crispy bacon to the sauce. Gently stir until the pasta becomes evenly coated in the creamy cheese sauce.
7. Finish and serve:
Finally sprinkle the remaining bacon and chopped parsley over the top. Serve immediately while warm and creamy.
Helpful Tips to Perfect This Recipe
- Use freshly shredded cheese for the best sauce: Pre-shredded cheese often contains anti-caking agents. Therefore, freshly shredded cheese melts more smoothly and creates a richer, creamier sauce.
- Cook bacon until crisp but not overdone: Crispy bacon adds texture and smoky flavor. However, if bacon becomes too dark, it can taste bitter. Aim for golden brown pieces for balanced flavor.
- Adjust sauce thickness easily: If the cheese sauce becomes too thick, stir in a tablespoon of warm milk or reserved pasta water. This helps loosen the sauce while keeping it silky and creamy.
