1 lb boneless skinless chicken thighs
½ cup low-sodium chicken broth
1 cup fresh cranberries
½ cup orange juice
3 tbsp honey
2 tbsp soy sauce
2 cloves garlic, minced
2 tbsp olive oil
1 tbsp butter
1 tbsp orange zest
1 tsp Dijon mustard
½ tsp dried thyme
1 tsp salt
½ tsp black pepper
1 tbsp cornstarch
1 tbsp water

INSTRUCTIONS

1. Season and sear:
Pat chicken thighs dry. Season both sides with salt and pepper. Heat olive oil and butter in a large skillet over medium-high. Add chicken and sear 3–4 minutes per side until lightly golden.

2. Build the sauce:
Reduce heat to medium. Add fresh cranberries, orange juice, orange zest, honey, soy sauce, garlic, Dijon, thyme, and chicken broth. Stir well to combine, scraping browned bits from the bottom.

3. Simmer gently:
