Recipe Yield: 9-12 bars

INGREDIENTS

FOR THE CRUST & CRUMB TOPPING:
2 ½ cups all-purpose flour
1 cup (2 sticks) unsalted butter, melted
¾ cup granulated sugar
¼ cup light brown sugar, packed
1 tsp baking powder
½ tsp salt
1 tsp vanilla extract
½ tsp ground cinnamon (optional but recommended for warmth & depth)

FOR THE BLUEBERRY FILLING:
3 cups fresh blueberries (or frozen, thawed and drained)
½ cup granulated sugar
1 tbsp cornstarch
One tbsp lemon juice
1 tsp lemon zest

INSTRUCTIONS

1. Preheat & Prep: Preheat your oven to 375°F (190°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.

2. Make the Crumb Base: In a large bowl, mix melted butter, flour, granulated sugar, brown sugar, baking powder, salt, cinnamon, and vanilla. Stir until the mixture forms coarse crumbs. Press half of the mixture evenly into the bottom of the prepared pan.

3. Prepare the Blueberry Filling: In another bowl, toss blueberries, sugar, cornstarch, lemon juice, and zest until evenly coated. Spread this mixture over the crust.

4. Add the Crumb Topping: Sprinkle the remaining crumb mixture over the blueberry filling, gently pressing it down.

5. Bake to Perfection: Bake for 45–50 minutes, or until the top is golden brown and the blueberry filling is bubbly. Let it cool completely before cutting into bars.

6. Slice & Serve: Once cooled, lift the bars from the pan using the parchment overhang. Slice into squares and enjoy!
