1/2 cup heavy cream
2 tbsp unsalted butter, divided
2 tbsp olive oil
3 garlic cloves, finely minced

1 tsp Italian seasoning
1 tsp Dijon mustard
1 tsp finely grated lemon zest
1 1/2 tbsp fresh lemon juice
1/4 tsp crushed red pepper flakes, optional

1 cup reserved pasta water, as needed
INSTRUCTIONS
1. Season the chicken:
Pat the chicken dry. Season both sides with 3/4 tsp salt, black pepper, garlic powder, and Italian seasoning.
2. Start the pasta water:
Bring a large pot of salted water to a boil. Keep it ready while the chicken and sauce are started.
3. Sear the chicken:
Heat the olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add the chicken and cook for 3–4 minutes per side, until golden and the thickest part reaches 165°F. Transfer to a plate and rest for 5 minutes.
4. Build the sauce:
Reduce the heat to medium. Add the remaining 1 tbsp butter and shallot. Cook for 1–2 minutes until softened. Add the garlic and red pepper flakes, if using, and cook for 30 seconds.
5. Make it creamy:
Pour in the chicken broth and scrape up the browned bits. Stir in the heavy cream, Dijon, and lemon zest. Simmer gently for 2–3 minutes until slightly reduced, then reduce the heat to low.
6. Cook the pasta:
Cook the angel hair until just shy of al dente according to package directions. Reserve 1 cup pasta water, then drain.
7. Add Parmesan and spinach:
Gradually stir the Parmesan into the sauce over low heat until smooth. Add the spinach and cook for 1–2 minutes, until just wilted.
8. Toss the pasta:
Add the drained angel hair and gently toss until evenly coated. Add reserved pasta water a little at a time as needed to keep the sauce silky.
9. Brighten the sauce:
Remove the skillet from the heat. Stir in the lemon juice and parsley, then taste and add the remaining 1/4 tsp salt if needed.
10. Finish and serve:
Slice the rested chicken into thick strips and arrange over the pasta. Spoon any resting juices over the top and finish with extra Parmesan and parsley.
