2. Cook the bacon:
Meanwhile, add the bacon to a large skillet over medium heat. Cook until crisp, then transfer to a paper towel-lined plate. Leave about 1 tbsp bacon drippings in the skillet.
3. Brown the beef:
Add the ground beef and onion to the skillet. Cook over medium-high heat for 6–8 minutes, breaking the beef into irregular crumbles, until browned and the beef reaches 160°F.
4. Build the smoky filling:
Add the garlic, tomato paste, chipotle, smoked paprika, cumin, remaining 1/2 tsp salt, and black pepper. Cook for 1 minute, stirring constantly.
5. Finish the beef mixture:
Stir in the beef broth and lime juice. Add the black beans, corn, and three-quarters of the cooked bacon. Simmer for 2–3 minutes, until the mixture is moist and cohesive but no excess liquid remains.

Transfer the baked potatoes to the baking sheet. Cut a lengthwise slit through the top of each potato. Gently squeeze the ends to open, then fluff the centers with a fork without tearing the skins.
