Avocado Tomato Cucumber Salad

INGREDIENTS

2 Avocadoes
1-pint Grape Tomatoes or 2 Tomatoes on the vine
7 Salad Cucumbers
1/2 Red Onion, medium
1/2 Clove of Garlic, medium, peeled and minced
3 tbsp. Cilantro, fresh
1 tbsp. Lemon juice, fresh
1 tsp. Sea Salt
1/4 tsp. Ground Black Pepper
1 tsp. Crushed Red Pepper
2 tbsp. Olive Oil

DIRECTIONS

1. Wash all vegetables and cilantro thoroughly.
2. Peel and chop cucumbers, cut the grape tomatoes in half lengthwise (or chop if using another kind). Core and dice avocado. Slice onions very thinly.
3. In a separate mixing bowl, combine cilantro and minced garlic with spices and mix all with olive oil.
4. Add your dressing to the salad bowl with vegetables and mix well.
