Brownie Batter Overnight Oats turn an everyday breakfast into something wonderfully indulgent. They are thick, creamy, deeply chocolatey, and filled with little chocolate pockets in every spoonful.
Greek yogurt gives the oats their rich, velvety texture, while chia seeds help everything become thick and spoonable overnight. Maple syrup adds just enough sweetness to balance the cocoa. Meanwhile, a tiny pinch of espresso powder makes the chocolate taste deeper without making the oats taste like coffee.
Everything comes together in minutes, making this an easy breakfast for busy mornings or relaxed weekends. Enjoy the oats straight from the refrigerator, or let them sit briefly for a softer chill. Either way, they deliver that irresistible brownie-batter flavor while remaining satisfying enough to start the day.

Recipe Yield: 2 servings
INGREDIENTS
1 cup old-fashioned rolled oats
2½ tbsp unsweetened cocoa powder, preferably Dutch-process
¾ cup milk, plus more as needed
½ cup plain Greek yogurt, whole-milk preferred
2 tbsp mini semisweet chocolate chips, divided
1 tbsp chia seeds
⅛ tsp fine salt
3 tbsp pure maple syrup
1 tsp vanilla extract
¼ tsp instant espresso powder, optional
2 tbsp chopped dark chocolate, for topping
INSTRUCTIONS
1. Make the cocoa paste:
Whisk the cocoa powder, maple syrup, vanilla, espresso powder, salt, and 2 tbsp milk until glossy and smooth.
2. Finish the creamy base:
Whisk in the remaining milk and Greek yogurt until evenly combined.
3. Add the oats:
Stir in the rolled oats, chia seeds, and 1½ tbsp chocolate chips. Rest for 5 minutes, then stir again.
4. Chill overnight:
Divide between two jars or covered containers. Refrigerate for at least 6 hours, preferably overnight.
5. Finish and serve:
Stir well, adding 1–2 tbsp milk if needed. Top with the remaining chocolate chips and chopped dark chocolate.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Begin with a smooth cocoa paste: Whisking the cocoa with maple syrup and a little milk prevents dry cocoa pockets in the finished oats.
- Stir twice before chilling: The brief rest lets the chia seeds begin absorbing liquid. A second stir prevents clumps and uneven thickness.
- Choose rolled oats: Old-fashioned oats soften while keeping a pleasant texture. Quick oats can become mushy, while steel-cut oats remain too firm.
- Adjust after chilling: The oats continue thickening overnight. Add milk one tablespoon at a time until the consistency is perfectly creamy.
- Keep the topping textured: Refrigerate the oats for up to four days, but add the chopped chocolate shortly before serving for the best bite.
