Easy Cucumber Caprese Salad is a refreshing twist on the classic Italian favorite, and it’s perfect for quick meals or elegant sides. While traditional Caprese features tomatoes, mozzarella, and basil, this version adds crisp cucumbers for extra freshness and texture. As a result, every bite feels light, juicy, and incredibly satisfying.

Moreover, this salad comes together in minutes, making it ideal for busy days or last-minute gatherings. The combination of creamy mozzarella, sweet tomatoes, and cool cucumbers creates a beautiful balance of flavors. Meanwhile, a simple olive oil dressing enhances everything without overpowering the natural ingredients.

Interestingly, Caprese salad originated on the island of Capri in Italy and was designed to reflect the colors of the Italian flag. Today, modern variations like this one keep the tradition alive while adding a fresh, seasonal upgrade. Whether served as a side or a light meal, this salad is both timeless and effortlessly delicious.

Recipe Yield: 4 servings

INGREDIENTS

2 cups cucumber, sliced
1½ cups cherry tomatoes, halved
1 cup fresh mozzarella balls
2 tbsp olive oil
1 tbsp balsamic glaze
1 tbsp fresh basil, chopped
½ tsp salt (divided)
¼ tsp black pepper
1 tsp lemon juice (optional)
½ tsp dried oregano (optional, recommended)

INSTRUCTIONS

1. Prep the ingredients:
Wash and slice cucumbers, halve tomatoes, and drain mozzarella. Place cucumbers and tomatoes into a large bowl, and set mozzarella aside.

2. Season mozzarella:
Lightly sprinkle a small pinch of salt over mozzarella and toss gently. This enhances flavor from the inside.

3. Combine the base:
Add mozzarella to the bowl with cucumbers and tomatoes. Then gently toss to evenly distribute.

4. Add dressing:
Drizzle olive oil and lemon juice (if using). Sprinkle black pepper and oregano (if using). Toss lightly to coat.

5. Finish and season:
Add remaining salt just before serving. As a result, cucumbers stay crisp and fresh.

6. Garnish and serve:
Drizzle balsamic glaze over the top (do not mix). Then sprinkle fresh basil and serve immediately.

HELPFUL TIPS TO PERFECT THIS RECIPE

  • Use high-quality mozzarella:
Because mozzarella is a key ingredient, choosing fresh, creamy balls makes a big difference. Additionally, smaller pearls distribute flavor more evenly throughout the salad.
  • Salt just before serving:
Although seasoning is essential, adding salt too early can draw moisture from cucumbers. Therefore, season right before serving to keep everything crisp and fresh.
  • Balance acidity carefully:
While balsamic glaze adds sweetness, a touch of lemon juice brightens the dish. However, use it lightly so it enhances rather than overpowers the classic Caprese flavor.
