INGREDIENTS

1 ½ cups pitted dates (packed, Medjool preferred)
1 ¼ cups mixed nuts (½ cup almonds, ½ cup cashews, ¼ cup walnuts)
1 tbsp honey or maple syrup

INSTRUCTIONS

1. Blend the ingredients:
Add the almonds, cashews, and walnuts to a food processor. Pulse until finely chopped, leaving some small nut pieces for texture. Add the dates and honey or maple syrup. Process in short bursts until the mixture begins to clump and holds together when pinched.

2. Press into the pan:
Line an 8×8 pan with parchment paper. Transfer the mixture to the pan and press very firmly into an even, compact layer. The tighter it is packed, the better the bars will hold together.

3. Chill and set:
Refrigerate for at least 1 ½ hours, or until completely firm and easy to lift from the pan.

4. Slice and enjoy:
