Banana dough:
3 3/4 cups all-purpose flour, plus 2–4 tbsp as needed
3/4 cup mashed very ripe banana
1/2 cup whole milk, warmed to 105–110°F
4 tbsp unsalted butter, melted and slightly cooled
2 1/4 tsp active dry yeast
1/4 cup granulated sugar, divided
1 large egg, room temperature
1 large egg yolk, room temperature
1 tsp pure vanilla extract
1 1/4 tsp fine salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg

Cinnamon filling:
6 tbsp unsalted butter, softened
3/4 cup packed dark brown sugar
1 1/2 tbsp ground cinnamon
1 tbsp all-purpose flour
1/4 tsp ground nutmeg
1/4 tsp fine salt

Cream cheese glaze:
4 oz cream cheese, softened
2 tbsp unsalted butter, softened
1 1/4 cups powdered sugar
1 tsp pure vanilla extract
1/8 tsp fine salt
1–2 tbsp whole milk, as needed

Serving:
1 small firm-ripe banana, sliced, optional
Ground cinnamon, for dusting

INSTRUCTIONS

1. Activate the yeast:
Whisk the warm milk, yeast, and 1 tbsp of the sugar in a large mixing bowl. Let stand for 5–10 minutes, until foamy.

2. Add the wet ingredients:
Whisk in the mashed banana, remaining sugar, egg, egg yolk, melted butter, and vanilla until evenly combined.

3. Make the dough:
Add 3 1/2 cups flour, salt, cinnamon, and nutmeg. Mix until a shaggy dough forms. Gradually add the remaining flour, then knead for 7–9 minutes. Add extra flour only as needed until the dough is smooth, elastic, and slightly tacky rather than wet.

4. Let the dough rise:
Transfer the dough to a lightly greased bowl. Cover and let rise in a warm place for 60–90 minutes, or until nearly doubled and airy.

5. Prepare the filling:
Mix the softened butter, brown sugar, cinnamon, flour, nutmeg, and salt until evenly combined and spreadable.

6. Shape the rolls:
Roll the dough into an 18×12-inch rectangle. Spread the filling evenly over the dough, leaving a 1/2-inch border along one long edge. Roll tightly from the opposite long edge and pinch the seam closed. Cut into twelve 1 1/2-inch rolls.

7. Complete the second rise:
Arrange the rolls in a lightly greased 9×13-inch baking dish. Cover and let rise for 35–55 minutes, until puffy and beginning to touch. A gentle fingertip indentation should spring back slowly. Meanwhile, preheat the oven to 350°F.

8. Bake the cinnamon rolls:
Bake for 25–30 minutes, until lightly golden and the center rolls reach 190°F. Let cool in the pan for 10–15 minutes.

9. Make the glaze:
Beat the cream cheese and butter until completely smooth. Add the powdered sugar, vanilla, and salt. Beat in enough milk to create a thick, creamy glaze.

10. Finish and serve:
Spread the glaze over the warm rolls. Just before serving, add fresh banana slices and a light dusting of cinnamon, if desired.
