1 box (3.4 oz) instant vanilla pudding mix
1 cup cold whole milk
2 cans (15 oz each) sliced peaches in juice, well drained and diced
2 cups mini marshmallows
1 tub (8 oz) whipped topping, thawed
½ cup plain Greek yogurt or 4 oz cream cheese, fully softened
1 tsp vanilla extract
½ cup shredded coconut (optional)
½ cup chopped pecans or walnuts (optional)

INSTRUCTIONS

1. Whisk the pudding:
In a large mixing bowl, whisk together the vanilla pudding mix, cold milk, and vanilla extract until thickened, about 2 minutes.

2. Make it creamy:
Whisk in the Greek yogurt or softened cream cheese until smooth and fully combined.

3. Fold in the fluff:

4. Add peaches and marshmallows:
Fold in the diced peaches, mini marshmallows, and shredded coconut, if using. Reserve a few peaches and marshmallows for serving, if desired.
