Slow Cooker Steak Cheddar Potato Casserole made with tender sirloin steak, soft potatoes, and rich melted cheddar cheese for a comforting homemade slow cooker dinner.

Slow Cooker Steak Cheddar Potato Casserole is the ultimate comfort meal for busy evenings and cozy weekends. Tender bites of slow-cooked steak melt into creamy potatoes, while rich cheddar cheese brings everything together in a warm, satisfying casserole. Even better, the slow cooker does most of the work, so you can simply layer the ingredients and let the flavors slowly develop throughout the day.

Meanwhile, as the steak simmers with garlic, butter, and savory broth, the potatoes absorb every bit of that rich flavor. Then, toward the end, sharp cheddar melts beautifully into the casserole, creating a creamy, hearty finish that feels like a steakhouse dinner at home.

Interestingly, casseroles became popular in American kitchens during the 1950s when convenient one-pot meals gained popularity. Today, however, slow cooker casseroles bring that same comfort with even less effort.

Serve this dish for family dinners, cold nights, or casual gatherings. It is hearty, comforting, and wonderfully satisfying.

Recipe Yield: 6 servings

INGREDIENTS

1 1/2 lb sirloin steak, cut into bite-size cubes
4 cups Yukon Gold potatoes, peeled and cubed
1 cup sharp cheddar cheese, shredded
1 cup mild cheddar cheese, shredded
3/4 cup beef broth
1/2 cup heavy cream
2 tbsp butter, melted
1 tbsp olive oil
3 cloves garlic, minced
1 tsp onion powder
1/2 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh thyme, chopped
2 tbsp fresh parsley, chopped

INSTRUCTIONS

1. Prepare the steak:
Pat steak cubes dry. Then toss with olive oil, salt, pepper, smoked paprika, and onion powder until evenly coated.

2. Layer the casserole:
Place half of the cubed potatoes into the slow cooker. Next, add half of the steak pieces and sprinkle lightly with garlic and thyme.

3. Build the second layer:
Add the remaining potatoes and steak. Meanwhile, pour beef broth and melted butter evenly over the top.

4. Slow cook:
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are tender and steak is fully cooked.

5. Add cream and cheese:
Pour in the heavy cream and gently stir. Then sprinkle both cheddar cheeses evenly over the casserole.

6. Melt and finish:
Cover again and cook for another 10–15 minutes until the cheese melts smoothly.

7. Garnish and serve:
Finally, sprinkle fresh parsley on top and serve warm directly from the slow cooker.

Helpful Tips to Perfect This Recipe

Choose Tender Steak Cuts
Sirloin works beautifully in this casserole because it stays tender while slow cooking. However, if you prefer an even richer texture, ribeye or strip steak also works wonderfully.

Cut Potatoes Evenly
For consistent cooking, cut potatoes into similar 1-inch cubes. As a result, they cook evenly and absorb the savory broth without turning mushy.

Add Cheese at the End
Always add the cheddar during the final cooking stage. Otherwise, it may separate during long cooking. This way, the cheese melts smoothly and creates a creamy steakhouse-style finish.
