1/3 cup sweet chili sauce

1 tbsp low-sodium soy sauce
1 tbsp avocado oil, plus more for the grill grates
4 garlic cloves, finely minced
1 tbsp finely grated fresh ginger
1/2 tsp ground coriander
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
2 tbsp toasted unsweetened coconut flakes
2 tbsp chopped fresh cilantro
2 tbsp thinly sliced green onions
1 lime, cut into wedges, for serving
INSTRUCTIONS
1. Make the marinade:
Whisk the coconut milk, sweet chili sauce, lime juice, lime zest, soy sauce, oil, garlic, ginger, coriander, salt, and pepper.
2. Reserve the glaze:
Transfer 1/2 cup of the marinade to a small saucepan before it touches the raw chicken. Cover and refrigerate until needed.
3. Marinate the chicken:
Add the chicken to the remaining marinade and coat thoroughly. Cover and refrigerate for 30 minutes or up to 4 hours.
4. Prepare the grill:
Preheat the grill to medium heat, about 375–400°F. Clean and lightly oil the grill grates.
5. Prepare the glaze:
Bring the reserved sauce to a gentle simmer over medium-low heat. Cook for 3–4 minutes, whisking often, until glossy and lightly thickened.
6. Divide the glaze:
Divide the glaze between two small bowls. Reserve one clean bowl for serving and use the other only for brushing the chicken.
7. Grill the first side:
Remove the chicken from the marinade and let the excess drip away. Discard the used marinade. Grill the chicken covered for 5–6 minutes.
8. Glaze and finish:
Turn the chicken and grill for another 4–6 minutes. Brush lightly with the basting glaze during the final 2 minutes. Cook until the thickest portion reaches 165°F/74°C.
9. Rest and serve:
Rest the chicken for 5 minutes. Spoon over the clean finishing glaze, then add toasted coconut, cilantro, green onions, and lime wedges.
