1 1/2 lbs baby Yukon Gold potatoes, halved, quartered if large
1 1/2 lbs uncooked mild Italian pork sausage links
1 large red bell pepper, cut into 1-inch pieces
1 large yellow bell pepper, cut into 1-inch pieces
1 medium red onion, cut into 1-inch wedges
3 garlic cloves, finely minced
3 tbsp extra-virgin olive oil, divided
1 tsp kosher salt, divided
1/2 tsp black pepper
1 tsp garlic powder
1/2 tsp smoked paprika
1 tsp chopped fresh rosemary
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 tsp honey
1/2 cup finely grated Parmesan cheese
3 tbsp chopped fresh parsley

INSTRUCTIONS

1. Prepare the potatoes:
Preheat the oven to 425°F. Toss potatoes with 2 tbsp olive oil, 3/4 tsp salt, black pepper, garlic powder, and smoked paprika.

2. Start the roast:
Arrange potatoes cut-side down on a parchment-lined 18 x 13-inch rimmed baking sheet. Roast for 18 minutes without turning.

3. Prepare the sausage:
Meanwhile, cut each sausage link into 3 equal pieces. Toss sausage, bell peppers, and red onion with remaining 1 tbsp olive oil and 1/4 tsp salt.

4. Add the vegetables:
Remove the pan from the oven. Turn the potatoes, then arrange sausage, peppers, and onion around them in an even layer.

5. Continue roasting:
Roast for 12 minutes. Turn the sausage and vegetables, then roast for 8–10 minutes more, until potatoes are crisp and fork-tender.

6. Make the balsamic finish:
Meanwhile, whisk garlic, rosemary, balsamic vinegar, Dijon, and honey together in a small bowl.

7. Glaze the bake:
Drizzle the balsamic mixture over the pan. Toss gently, leaving several potatoes cut-side down against the hot surface.

8. Add the Parmesan:
Sprinkle the Parmesan evenly over the pan. Roast for 3–5 minutes, until the cheese melts and the sausage reaches 160°F in the center.

9. Finish and serve:
Let the bake rest for 3 minutes. Sprinkle with fresh parsley and serve warm with the savory pan juices.
