Slow Cooker Balsamic Pork Tenderloin makes a lean, everyday cut feel polished without turning dinner into a project. The pork is seasoned, quickly seared, then cooked gently in a savory maple-Dijon balsamic sauce with garlic, thyme, and smoked paprika. As it cooks, the sauce picks up the browned flavor from the skillet and the natural juices from the pork. Then, a quick stovetop finish turns it glossy and spoonable.
Pork tenderloin is especially well suited to this style of slow cooking because it becomes tender and juicy without needing hours and hours in the slow cooker. The result is beautifully sliceable pork with a rich balsamic sauce that feels comforting, polished, and easy enough for a weeknight. Serve it with mashed potatoes, creamy polenta, rice, or roasted vegetables. A generous spoonful of warm sauce brings everything together beautifully.

Recipe Yield: 6 servings
INGREDIENTS
2 pork tenderloins, 1–1 1/4 lb each, silver skin removed
1/3 cup low-sodium chicken broth
1/4 cup balsamic vinegar
3 tbsp pure maple syrup
2 tbsp low-sodium soy sauce
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
2 tsp tomato paste
4 garlic cloves, minced
3/4 tsp kosher salt
1/2 tsp black pepper
1 tsp smoked paprika
1 tsp onion powder
1/2 tsp dried thyme
1 tbsp olive oil
1 1/2 tbsp cornstarch
2 tbsp cold water
1 tbsp unsalted butter
2 tbsp chopped fresh parsley
INSTRUCTIONS
1. Season the pork:
Pat the pork tenderloins dry. Then, season evenly with salt, pepper, smoked paprika, onion powder, and thyme.
2. Sear the tenderloins:
Heat olive oil in a large skillet over medium-high heat. Sear the pork on all sides for 1 1/2–2 minutes per side, about 6–8 minutes total. Transfer to a 5- to 6-qt slow cooker and arrange the tenderloins side by side.
3. Build the sauce:
Whisk together chicken broth, balsamic vinegar, maple syrup, soy sauce, Dijon, Worcestershire, tomato paste, and garlic. Pour into the warm skillet and bring to a simmer, scraping up the browned bits. Cook for 1 minute.
4. Slow cook the pork:
Pour the warm balsamic mixture over and around the tenderloins. Cover and cook on LOW for 1 3/4–2 1/2 hours, checking at 1 3/4 hours, until the thickest part reaches 145°F. Remove the pork promptly to prevent overcooking.
5. Rest the tenderloins:
Transfer the pork to a cutting board and let it rest for 10 minutes. Meanwhile, pour the cooking liquid into a medium saucepan.
6. Finish the sauce:
Bring the cooking liquid to a gentle simmer over medium heat. Whisk cornstarch with cold water until completely smooth. Gradually whisk the slurry into the sauce and simmer for 1–2 minutes, until glossy and thick enough to coat a spoon. Remove from heat and stir in the butter.
7. Slice and serve:
Slice the pork across the grain into 1/2-inch medallions. Arrange on a serving platter, spoon the balsamic sauce generously over the top, and finish with fresh parsley.
Helpful Tips to Perfect This Recipe
- Arrange the pork side by side: Avoid stacking the tenderloins in the slow cooker. Keeping them in one even layer helps both pieces cook at a similar rate.
- Trust the thermometer, not only the timer: Slow cookers vary considerably. Begin checking early and remove the pork promptly at 145°F so it stays juicy and slices cleanly.
- Thicken the sauce gradually: Whisk the slurry again immediately before adding it, since cornstarch settles quickly. The balsamic sauce will also thicken slightly as it cools.
