INGREDIENTS

For the zucchini fries:
2 medium zucchini, about 1 lb, trimmed and cut into 3-inch x 1/2-inch fries
1 1/4 cups panko breadcrumbs
1/2 cup finely grated Parmesan cheese, plus more for serving
1/2 cup all-purpose flour
2 tbsp cornstarch
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1/4 tsp smoked paprika
1/2 tsp kosher salt
1/4 tsp black pepper
2 large eggs
1 tsp Dijon mustard
2 tbsp olive oil
1 tbsp finely chopped fresh parsley
Olive oil spray, as needed

For the lemon herb dipping sauce:
1/3 cup mayonnaise
1/3 cup sour cream or plain Greek yogurt
1 tbsp fresh lemon juice
1 tsp honey
1 small garlic clove, finely grated
1 tbsp finely chopped fresh parsley
1/4 tsp kosher salt

INSTRUCTIONS

1. Make the dip:
Stir the mayonnaise, sour cream, lemon juice, honey, grated garlic, 1 tbsp parsley, and 1/4 tsp salt until smooth. Then cover and refrigerate while you make the zucchini fries.

2. Prep the zucchini:
Pat the zucchini fries very dry with paper towels. This helps the coating stick and keeps the texture crisp.

3. Set up the coating:
In one shallow bowl, whisk the flour, cornstarch, garlic powder, onion powder, Italian seasoning, smoked paprika, remaining 1/2 tsp salt, and black pepper. In a second bowl, whisk the eggs with Dijon mustard. In a third bowl, mix the panko, Parmesan, olive oil, and remaining 1 tbsp parsley.

4. Bread the zucchini:
Coat each zucchini fry in the flour mixture, dip into the egg, and press into the Parmesan-panko crumbs. Place on a plate while you finish the rest.

5. Air fry until crisp:
Preheat the air fryer to 400°F. Lightly spray the basket with olive oil spray. Arrange the zucchini fries in a single layer, working in batches as needed, and lightly spray the tops. Air fry for 9–11 minutes, turning halfway, until golden and crisp.

6. Serve hot:
Sprinkle with extra Parmesan and parsley. Serve immediately with the lemon herb dip.
