12 oz rotini pasta
8 slices thick-cut bacon
1 1/2 cups chopped crisp dill pickles, drained well
1 cup extra-sharp cheddar cheese, cut into small cubes
1/3 cup finely diced red onion
1/4 cup chopped fresh dill, divided
3/4 cup mayonnaise
1/2 cup sour cream
1/4 cup plus 2 tbsp dill pickle brine, divided
2 tsp Dijon mustard
1 tsp honey
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp freshly ground black pepper
Kosher salt, for the pasta water

INSTRUCTIONS

1. Cook the bacon:
Cook the bacon in a skillet over medium heat until crisp. Transfer it to a paper towel-lined plate, then cool and roughly chop.

2. Cook the pasta:
Boil the rotini in lightly salted water according to the package’s al dente instructions, using the longer end of the suggested cooking time. Drain, rinse briefly with cool water, and shake off excess moisture.

3. Season the pasta:
Toss the drained pasta with 2 tbsp pickle brine. Let it cool for 10 minutes while you prepare the dressing.

4. Make the dressing:
Whisk the mayonnaise, sour cream, remaining 1/4 cup pickle brine, Dijon, honey, garlic powder, onion powder, and black pepper until smooth. Reserve 1/3 cup for serving.

5. Assemble the salad:
Combine the pasta, pickles, cheddar, red onion, half the dill, and three-quarters of the bacon. Fold in the remaining dressing until everything is evenly coated.

6. Chill and finish:
Cover and refrigerate for at least 1 hour. Before serving, fold in the reserved dressing and top with the remaining bacon and dill.
