Recipe Yield: 6 popsicles

INGREDIENTS

1 ½ cups fresh or frozen strawberries (hulled)
1 cup plain Greek yogurt (full-fat for creaminess)
2 tbsp honey (plus more to taste)

INSTRUCTIONS

1. Blend Ingredients:
In a blender or food processor, combine the strawberries, Greek yogurt, and honey. Blend until completely smooth. Taste and adjust honey if you prefer a sweeter pop.

2. Pour into Molds:
Carefully pour the strawberry-yogurt mixture into popsicle molds, leaving a little space at the top for expansion. Insert sticks.

3. Freeze Until Solid:
Freeze for at least 4–6 hours, or overnight, until the popsicles are completely solid. To release, briefly run the molds under warm water.

HELPFUL TIPS TO PERFECT THIS RECIPE

  • Use Full-Fat Greek Yogurt for Creaminess: It adds richness and helps avoid icy popsicles. Skim yogurt can lead to an icy texture.
  • Frozen Strawberries Work Too: If fresh strawberries are out of season, frozen ones (thawed slightly) blend just as beautifully.
  • Sweeten to Taste: Depending on the natural sweetness of your berries, you may want to add an extra drizzle of honey.
