INSTRUCTIONS
1. Roast the squash:
Preheat the oven to 400°F and line a large rimmed baking sheet with parchment paper. Toss the squash with olive oil, cinnamon, nutmeg, and ginger until evenly coated. Spread in a single layer without crowding, using two baking sheets if needed. Roast for 25–30 minutes, or until very tender and lightly golden.
2. Blend until smooth:
Let the squash cool slightly for 5–10 minutes. Transfer it to a blender and add 3 cups vegetable broth. Blend until completely smooth, working in batches if needed and following your blender’s directions for hot ingredients. Add more broth gradually if needed.
3. Simmer and season:
Pour the soup into a pot over medium-low heat. Stir in the heavy cream and maple syrup, then season with salt and black pepper. Gently simmer for 5–10 minutes, stirring occasionally. Add a little more broth if needed for your preferred consistency.
4. Serve and garnish:
