Air Fryer Hot Honey Broccoli Cheddar Bites turn everyday broccoli into golden, cheesy little patties with an irresistible sweet-heat finish. Finely chopped broccoli is mixed with extra-sharp cheddar, Parmesan, scallions, Dijon, and panko, then air fried until browned around the edges.
The centers stay tender and cheesy, while the outside develops plenty of satisfying crispness. Dijon adds a subtle savory tang that works especially well with sharp cheddar without making the bites taste mustardy. Then a quick hot honey with chile, apple cider vinegar, and fresh lemon zest brings sweetness, gentle heat, and a bright finish.
These bites make an easy party appetizer, afternoon snack, or vegetable side when plain broccoli feels a little too predictable. Keep them slightly rustic rather than perfectly shaped, and serve them warm with a light drizzle of hot honey. Extra sauce on the side is always a good idea.

Recipe Yield: 18 bites
INGREDIENTS
3 cups small broccoli florets (about 10 oz)
1 cup freshly shredded extra-sharp cheddar cheese
1/3 cup finely grated Parmesan cheese
1/2 cup panko breadcrumbs
2 large eggs
2 tbsp finely sliced green onions
1 tsp Dijon mustard
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp kosher salt
1/4 tsp black pepper
Olive oil spray, for air frying
3 tbsp honey
1/2 tsp crushed red pepper flakes
1/2 tsp apple cider vinegar
1/2 tsp finely grated lemon zest
INSTRUCTIONS
1. Cook the broccoli:
Steam the broccoli for 3–4 minutes, until bright green and just tender. Cool slightly, then chop very finely.
2. Remove excess moisture:
Transfer the chopped broccoli to several layers of paper towels. Press firmly to remove as much moisture as possible.
3. Mix the bites:
Add the broccoli, cheddar, Parmesan, panko, eggs, green onions, Dijon, garlic powder, onion powder, salt, and black pepper to a large bowl. Stir until evenly combined, then let the mixture stand for 5 minutes.
4. Shape the mixture:
Scoop about 2 tbsp mixture per bite. Press firmly into 18 slightly flattened patties about 2 inches wide and 1/2 inch thick.
5. Preheat the air fryer:
Preheat the air fryer to 375°F for 3 minutes. Lightly coat the basket and tops of the broccoli bites with olive oil spray.
6. Air fry until golden:
Arrange the bites in a single layer without touching. Air fry for 10–12 minutes, carefully turning after 6 minutes and lightly spraying the second side, until deeply golden and firm around the edges. Cook in batches if needed.
7. Make the hot honey:
Meanwhile, combine the honey and red pepper flakes in a small saucepan over low heat. Warm gently for 2 minutes without boiling. Remove from the heat, then stir in the apple cider vinegar and lemon zest.
8. Finish and serve:
Transfer the broccoli cheddar bites to a serving plate. Drizzle lightly with the warm hot honey and serve immediately, with extra hot honey on the side if desired.
Helpful Tips to Perfect This Recipe
- Dry the broccoli thoroughly: Excess moisture can make broccoli bites soft and difficult to turn. Press the finely chopped broccoli firmly before adding it to the mixture.
- Let the panko hydrate: Resting the mixture for 5 minutes gives the breadcrumbs time to absorb moisture from the eggs and broccoli, making the patties easier to shape.
- Press the patties firmly: Compact each portion rather than loosely forming it. A slightly flattened shape also creates more surface area for browned, crisp edges.
- Turn them gently: Let the first side develop a firm crust before flipping. A thin heatproof silicone spatula works better than tongs for keeping the warm patties intact.
- Finish with hot honey lightly: A small drizzle gives the bites sweet heat without softening the crisp exterior. Serve the remaining hot honey alongside for dipping.
