Thick and chewy Classic Peanut Butter Cookie Bars baked to golden perfection.

Classic Peanut Butter Cookie Bars are the ultimate comfort dessert for peanut butter lovers. While traditional cookies require scooping and multiple batches, these bars simplify everything. Instead, you press the dough into one pan and bake. As a result, you get thick, chewy, bakery-style squares with golden edges and a soft center.

Peanut butter desserts have been popular in American kitchens since the early 1900s. In fact, peanut butter became widely used during World War I because it was affordable and protein-rich. Since then, it has remained a staple in home baking.

These peanut butter cookie bars are buttery, rich, and perfectly balanced with brown sugar sweetness. Moreover, they slice beautifully, making them ideal for gatherings, lunchboxes, or weekend baking. Because they require simple pantry ingredients, they’re easy yet impressive.

Whether you enjoy them slightly warm or fully cooled, they deliver that nostalgic homemade flavor every time.

INGREDIENTS

2 1/4 cups all-purpose flour
1 cup creamy peanut butter
1 cup unsalted butter, softened
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
1/2 cup peanut butter chips (optional but recommended)

INSTRUCTIONS

1. Preheat and prepare:
Preheat oven to 350°F. Line a 9×9-inch baking pan with parchment paper, leaving slight overhang.

2. Cream the base:
In a large bowl, beat butter, peanut butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.

3. Add wet ingredients:
Mix in eggs one at a time, then stir in vanilla until smooth.

4. Combine dry ingredients:
In a separate bowl, whisk flour, baking soda, and salt. Gradually fold into the peanut butter mixture until just combined. Stir in peanut butter chips.

5. Press and bake:
Spread dough evenly into prepared pan. Bake 28–32 minutes until edges are golden and center is just set.

6. Cool completely:
Allow bars to cool fully before slicing for clean, bakery-style squares.

Helpful Tips to Perfect This Recipe

  • Do Not Overbake: The center should look slightly soft when removed from the oven. As a result, the bars stay thick, chewy, and bakery-style once cooled.
  • Use Room Temperature Ingredients: Butter and eggs at room temperature blend more smoothly. Consequently, the texture becomes soft and evenly baked.
  • Press Evenly Into the Pan: Use slightly damp fingers or the back of a spoon to smooth the top. This ensures uniform baking and clean edges for beautiful presentation.
