1/2 tsp Worcestershire sauce
1/2 tsp garlic powder, divided
1/4 tsp onion powder
1 tsp fresh lemon juice
1 tbsp olive oil
1/8 tsp kosher salt
1/8 tsp black pepper
INSTRUCTIONS
1. Preheat and prepare:
Preheat the oven to 425°F. Line a large baking sheet with parchment paper. Arrange the flatbreads on the sheet and brush their tops and edges lightly with olive oil.
2. Pre-crisp the flatbreads:
Bake the flatbreads for 4 minutes. Remove them from the oven while keeping the oven heated.
3. Make the Buffalo chicken:
Whisk together the hot sauce, melted butter, honey, Worcestershire sauce, 1/4 tsp garlic powder, and onion powder. Reserve 1 tbsp for finishing, then toss the remaining sauce with the chicken.
4. Mix the ranch base:
Stir together the ricotta, ranch dressing, lemon juice, remaining garlic powder, salt, and black pepper until creamy.
5. Assemble the flatbreads:
Spread the ranch mixture thinly over each flatbread, leaving a 1/2-inch border. Add two-thirds of the mozzarella and cheddar, followed by the Buffalo chicken and remaining cheese.
6. Bake until crisp:
Bake for 7–9 minutes until the cheese is melted and bubbling. The flatbread edges should be crisp and lightly golden.
7. Finish and serve:
Rest for 2 minutes. Top with celery, scallions, and optional blue cheese. Drizzle lightly with ranch and the reserved Buffalo sauce, then slice and serve warm.
