2 lb pork belly, skin removed, cut into 1-inch cubes
2 tbsp olive oil
1 tbsp low-sodium soy sauce
2 tbsp brown sugar
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp onion powder
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp cayenne pepper, optional
1 tbsp finely chopped fresh parsley, for garnish, optional

INSTRUCTIONS

1. Prepare the pork belly:
Pat the pork belly cubes thoroughly dry with paper towels.

2. Season the pork belly:
In a large bowl, whisk together the olive oil, soy sauce, brown sugar, smoked paprika, garlic powder, onion powder, cayenne, salt, and black pepper. Add the pork belly and toss until evenly coated. Let rest for 15 minutes.

3. Preheat the air fryer:
Preheat the air fryer to 400°F for 3 minutes.

4. Air fry until crispy:
Arrange the pork belly in a single layer, leaving space between the pieces. Cook in batches as needed. Air fry for 16 to 20 minutes, shaking after 8 minutes and again around 14 minutes. Begin checking at 16 minutes and continue cooking until deeply golden, crisp around the edges, and well rendered. The meatiest pieces should reach at least 145°F.

5. Rest and serve:
Transfer the pork belly bites to a serving plate and let rest for 3 minutes. Garnish with parsley if desired, then serve warm.
